About Erin Schaefgen

Owner of Three Little Blackbirds, an organic boutique style bakery in Portland, Oregon, Erin has always been drawn to the arts. Working as a professional baker and pastry chef when she was just 16, she then went on to become a ballet and jazz dance teacher, then a graphic artist and website engineer for over 10 years before discovering yet again her first love…pastry! With that, came a newfound addiction for cake art, but more specifically painting…edible painting! She now uses fondant as her canvas to prove that cakes that are delicious to eat can also be works of “Edible Art.”
